Recipe Exchange

Christmas Jubilee


I decided to take part in the recipe exchange over at Jessica Turner's blog, so here are my favorites:

WHIPPED SHORTBREAD
1 lb of salted BUTTER (not margarine)
1 cup of icing sugar
3 cups of flour.
Candied Cherries to garnish

Whip the butter, add the icing sugar and flour. Drop by teaspoon on the cookie sheet (ungreased) and top with 1/2 a cherry.Bake @ 300 for 20 minutes.

And my personal favorite (and one that I've yet to find anyone else that makes them except my mom...these squares are a hit wherever I take them!):

CHRISTMAS JUBILEE
1 1/4 cups flour
2/3 cup brown sugar
3/4 cup margarine
1 egg
1/2 teaspoon salt
1 1/2 cups salted mixed nuts
1 1/2 cups candied cherries --red and green (cut in half)
1 cup chocolate chips.
CRUST:1/3 cup of brown sugar (save the other 1/3c)flour and margarine. Mix well and press into jelly roll pan.(I use a glass 9 x 13 dish) Bake 350 for 15 minutes.
TOP:Combine remaining ingredients and put on crust. Bake an additional 20 minutes at 350.
